Cooking.

The great thing about being in North Macedonia and having very few social obligations is that I have time to cook! Now I like cooking, I will never be in “The Tent” getting a star baker badge but I do like to have the time to play around in the kitchen.

I made my flaky pastry from scratch, a challenge in a kitchen topping temperatures far in the 30oC! However, the proof is in the pudding and we had to admit this was a pretty good attempt. The filling was made with mincemeat, and here it is a mixture of pork, beef and bacon, I added onions and a lot of herbs to the mixture to make it flavoursome and considering everything is highly salted, I even made the mistake of whilst marinating my olives to add salt! Even after I had washed them the saltiness was TOO much and I had to resign them to the bin 😦 . After this hitch I erred on the side of caution with the sausage rolls and they were slightly too bland. We resolved the issue by dipping them into a spicy tomato sauce… hmmmm.

Next up was homemade Focaccia – none of the lightly baked dough looking focaccia but thoroughly slavered in olive oil, dressed with rosemary, rock salt and baked garlic. It had the right amount of chewiness and the taste to come back for more, which we did and ate the lot!

Another favourite which we never seem to make the time for is making pasta, I would say the fun of making it outweighs the taste of it! Although that is probably because I haven’t made it enough to perfect the art, this is what we made last year and from this made 3 different types of Ravioli. Since then I have studied recipes and Tips on how to perfect your own pasta and maybe I will have another go whilst here this time. I will keep you informed.
